Looking For Your Next Pumpkin Spice Latte? Nest Unveils New Fall Menu

As the leaves change and the air grows crisper, Nest Cafe — the acclaimed eatery inside Nurture Wellcare Marketplace — welcomes autumn with open arms and an enticing new menu that celebrates the season’s flavors. The team at Nurture and Nest Cafe has carefully crafted a collection of drinks and dishes that showcase the bountiful harvest of Colorado. 

“The fall menu is inspired by an unwavering appetite for seasonal, hyper-local ingredients, equal in comfort and nourishment of the body, mind and spirit,” said Nurture co-founder Kelly Campbell.

Because Nest was founded upon the pillars of clean, conscious and wholesome eating, it’s no surprise the new autumn menu centers around the nostalgia of pumpkin, which is full of potassium, magnesium, iron, zinc, vitamin C and beta carotene. Many coffee shops will introduce refined oils, sugars or artificial flavors into their pumpkin spice lattes. At Nest, guests will find the use of actual pumpkin, grade-A maple syrup and a unique merriment of warming spices. “And if you dig pumpkin spice lattes, don’t sleep on our pumpkin spice martini,” Campbell added.

Located in the Highlands neighborhood, Nest has earned its reputation as the community gathering spot — whether for brunch, as a co-working space or post-treatment from one of Nurture’s wellness providers.

“I heavily rely on the fact that food is meant to both tantalize your taste buds, while also propel optimal vitality, which we all deserve,” Campbell said.

Campbell emphasizes that Fall at Nest is curated to be a sensory experience. “It tastes like smoked paprika and maple sweet potatoes (found in our Harvest Cobb), roasted pepitas atop our Butternut Squash Soup and the caramelized Honeycrisp Apples weaved into our Apple Cider Muffins. It smells like cinnamon-turmeric golden milk, sipped amidst fresh crisp air,” she said. “It sounds like family, friends and co-workers chattering with the buzz of their slowly escaping summer adventures and projects. It feels like the comfort of basking in the warm sun, awaiting the inescapable darkness that awaits. This is all nature’s way; I believe in attuning to this rhythm, that is where we find ease, both in the kitchen and in our lives.”

This fall, Nest is offering a Wellness Happy Hour from 3-5 p.m. Monday through Friday. Expect discounted cocktails and mocktails, $1 off adaptogenic smoothies and other deals on light bites.
